Turkey is not just for Christmas!

THREE budding chefs from Warrington Collegiate have reached the final of the British Turkey Student Chef of the Year competition.
Tim Kewley, 23 from Lymm, Sam Shawcross, 19 from Woolston, and Sam Stanley, from Altrincham, will travel to the University of Birmingham College on May 30, where they will have just two hours to prepare and present their dishes to the judges.
Tim, who will compete in both the starter and main course categories, said: “The standard is incredibly high and I know I’ll have to produce my best work ever to win that coveted first place.”
His starter dish is a confit of Turkey leg in spring vegetable broth with gnocchi and his main course comprises Turkey wellington accompanied by butternet squad puree and sprouts garnished with bacon.
This year the competition will be judged by a prestigious panel including Paul Kelly, Chairman of the British Turkey Federation, Buidiono Bin Sukim, Banquet Chef, at The Savoy, Chef, Tony Robertson, Lee Maycock from the Craft Guild of Chefs and Sheila Eggleston from Stockpot Magazine.
Sam Shawcross will face the judges in the starter category with his menu of Turkey spring roll with Thai dipping sauce, while Sam Stanley will make a deconstructed Turkey carbonara.
Dave Chapman, Chef Lecturer for Hospitality and Catering at Warrington Collegiate said: “This is really good competition and a fantastic experience but quite a challenge. The students are really enthusiastic about the great taste and versatility of turkey and have developed some innovative and mouth-watering recipe ideas for the finals.”
